Zucchini flower fritters

Presentation

This recipe is a revisitation of an iconic dish of the Italian tradition: zucchini flower fritters. These delicious and soft delicacies are a true hymn to spring and summer, perfect as a light appetizer or as a tasty snack.

Ingredients:

  • 6 courgette flowers
  • 2 eggs
  • 150g of 00 flour
  • 50g of Parmesan cheese
  • 100g of cold sparkling water
  • about 30ml of seed oil
  • salt to taste
  • pepper to taste

Preparation:

Preparing the dough

1 In a bowl, place the eggs, salt, pepper and flour. Mix the ingredients and 2 add the water. Mix and finally 3 add the grated parmesan and mix again until you get a semi-liquid dough.

Add flowers and start frying

4 Remove the bottom of the flowers, open them, 5 chop them with a knife and add them to the mixture. Mix everything together and, if necessary, add water or flour to adjust the consistency. Heat the oil in a non-stick pan over medium heat. 6 Pour the mixture with a spoon, forming flat pancakes.

End of cooking

7 Turn the fritters over with two forks or a spatula until they brown on both sides. Then 8 place them on absorbent paper to remove excess oil and serve. If you want, you can also make a mini version, 9 taking just a spoonful of the batter. They will be ideal for an aperitif or as an elegant and original appetizer.

Advise

  • When to start frying : put a pinch of dough in the pan, when the oil starts to fry you can start.
  • And the lumps ? It doesn't matter if the dough is perfectly smooth, even if there are some lumps the result will still be excellent.
  • If you have any left over : you can eat them the next day, just store them in a closed container.
  • Customize them : you can customize them however you like, maybe you can give an extra boost of flavor by adding some anchovies or chopped ham to the mixture.
